  • Mix egg yolk and sugar until sugar dissolves.
  • Add corn flour to the mixture and stir it well until there are no lumps.
  • Pour the mixture back into the pot. Cook gently on a low heat until thickened, whisking continuously! TIP (Safest Option): When the mixture becomes thicker, remove it from the heat, and then return it to the heat. Repeat this process until becoming smooth and a bit thickened. *It will be thicker when it cools.
  • Put the mixture through a sieve.
  • Cover custard to chill with plastic wrap.
  • Cheesecake Cream
  • Whisk the softened cream cheese and sugar until the sugar dissolves, then mix the other ingredients (sour cream, cream, and lemon juice)together.
  • Put the mixture in a piping bag / another container.
  • Meringue
  • Freeze the egg white for 10 minutes.
  • Heat water and sugar until it reaches a temperature of 115-120°C.
  • Meanwhile, whisk the egg white to soft peaks.
  • Pour the sugar syrup into the egg white, whisking continuously until smooth and thick. TIP: No need to pour batter down the sides of the bowl, instead pour it directly into the egg white.
  • Assemble the bagel
  • First layer- cheesecake. Second layer- lemon milky custard. Third layer- meringue.
  • Use a baking torch to melt the meringue until golden brown.
